Best ever Gluten Free Bread


This is the best ever gluten free bread to date.

Background

About a year and a half ago I suddenly had issues eating dairy. Then a few months later I had issues eating anything with gluten.

My world seemed to turned upside down. I had to figure out how and what I could eat. A lot of mistakes made for some seriously crappy days.

Over time I learned that there are a lot ingredients I can’t have in products that I liked and bought often.

I quickly learned to go through all the ingredients list in everything I buy. Which really turned me even more towards my Epicure products.

I love the fact that the meal solutions are so quick and easy to make. They taste fantastic and have absolutely no gluten. They have been an absolute life saver for having healthy, tasty and safe meals.

The bread journey

The one item I have missed, even though I didn’t eat it too much, was bread.

I have tried so many different brands of bread, buns, muffins or bagels. I have only found one that I don’t mind too much. That is the Kinnikinnik brand English muffins. I get it from my local grocery store.

Trying different flours

I have tried a number of different types of gluten free flour. Some of them being Bob’s Red Mill, Robinhood all purpose and Only Goodness.

They were all not too bad, some were quite dense which I didn’t like.

Then I decided to try creating my own flour blend using psyllium husk, tapioca starch, millet flour and sorghum flour.

With this and a few other ingredients I made some dinner buns. They were the best I had tasted to date. Problem was, the way I stored them, they went quite hard.

Going to try these again and figure out a better way of storing them.

Caputo Gluten free flour

While searching out other recipes and flours, I stumbled across Caputo Flourglute, This gluten free flour was supposed to be absolutely amazing.

So, I bought some to try it out. I had seen a couple recipes, one for pizza dough and one for artisan bread.

The pizzas looked absolutely amazing. Had to try that first. I was craving pizza like crazy.

Pizza dough

Taking the ingredients and recipe I made the pizza dough. Proofed it, set up my silicone baking sheet so I could press out the dough and add toppings.

It was extremely difficult to move the prepared pizza onto the pizza pan. I suggest making it on a piece of parchment paper then transferring it on the parchment paper onto the pizza pan.

The pizza turned out absolutely amazing. Crust was fluffy and had a nice crust. I will definitely be making these again.

Gluten Free Bread

This had to be the best gluten free bread so far.

Once I had finished the pizzas, I was going in for the bread.

Followed the recipe, proofed the bread, got the oven and Dutch oven ready.

I was so surprised how much it rose.

I realized I had made a mistake during the proofing process. I should have let the dough rest for 10 min, then put it in the proofing basket for the allotted time.

It still turned out really well. I was really happy with how it baked, the crust was amazing and taste was the closest I have had yet.

It even looked so much closer to real bread.

The only thing I am finding is that after a couple days, the bread seems to feel more like a loofah sponge.

The journey will continue, trying different recipes, products and taste testing. Once I come up with something that is 100%, it will be shared. So, make sure you follow along.
